My oldest daughter, Melissa, had a birthday this week. I created this card for her using our new, cool Create a Cupcake Stamp Set and matching punch! My hostess club was this week, so I designed a special card for Melissa, and then let the ladies at club make it too! What do you think of it?

Melissa wanted an Earthquake Cake for her birthday cake. In case you don't know what that is, I thought I'd share the recipe and a few photos of how to make it. The recipe calls for a 9" x 13" pan, but I've always used this heart pan to make this cake. It's all I've ever used this pan for and you can tell that it's been used several times over the years. I just happen to have a glass heart-shape platter that this cake fits so nicely on.
If you like German Chocolate cake, you'll love this cake. It's obviously not "as good", but it is much less work than the "real deal" and one of our family favorites!
Earthquake Cake
8 oz Coconut
1 c Chopped Pecans
1 German Chocolate Cake Mix
3-3/4 c Powdered Sugar
8 oz Cream Cheese, softened
Spray 9 x 13 pan with Pam and preheat oven to 350 degrees.
Layer 1: Spread coconut and pecans on bottom of pan.
Layer 2: Mix German Chocolate cake mix per directions on box. Pour over coconut mixture.
Layer 3: Mix powdered sugar with 8 oz cream cheese. Beat until smooth. Drop by spoonful randomly on cake mix.
Bake at 350 degrees for 30 minutes or until done. (In Colorado, this takes closer to 50-65 minutes.) It will still be a little "wiggly", but not overly. Use a toothpick in a portion of the "inner cake" to "help" determine if it is done.
Cool for 15 minutes.
